Would it be possible to create custom fields in the backend where frontend userdetails are stored?
And to remove existing fields.
I tried removing the colums from the database but they still show in my typo3 backend.

for example by making of webiste users in backend there are a lot of fields that are not needed: like Custom IM Account... and other fields we are missing, like function, team...
Is there any possibility to delete and add it?

Yes, you can administrate the rights and permissions of the users... for your idea, take a community extension like:
